Stuffed Avocado
While on vacation this summer in Utah my mom ate at a restaurant called Los Cucos. If you are ever at 10600 and state you should stop in and try it. They say it was delicious and reasonably priced. One of their favorite dishes there was a stuffed Avocado. I parents tried it and loved it, even my dad who is not a fine of Mexico food at all. So when they got back he wanted us to recreate the dish (he liked it that much). So we tried our hand at it. Even though I have not tried the Stuffed Avocados at the restaurant this turned out wonderful, and they are very versatile to your liking. You can do whatever meat you have on hand or even left over from a previous dinner. I don’t know about you but I love recipes that can reinvent my leftovers. You can also use or mix up your cheese combinations for different flavors. This is by no means I diet friendly recipe but it is delicious and worth the splurge. Try it and you will see!
Stuffed Avocado
Yield: Serves 8
Ingredients
4 large hass avocados
1-2lbs of shredded cheese
2 chicken breast chopped
1 cup flour
2 eggs
1 ½ cup panko bread crumbs
Oil for frying
Directions
Add salt and pepper to meat and sauté until done. Set meat aside (can skip this step if using leftover meat)
In a large fryer start heating oil. Make egg wash adding water to your eggs in a bowl, in separate bowl add flour seasoned to your liking, and in third bowl add panko. Put cheese in a bowl and microwave just until it begins to stick together. You do not want the cheese melted just warm. This took about 15-30 seconds in my microwave.
Cut the Avocados in halve, remove pit and scrape out of shell with a spoon. Stuff meat into whole of avocado, filling it as full as possible. Then start pressing cheese all around avocado and meat creating a ball. Roll Avocado in flour, then egg wash, and lastly panko crumbs. Set aside.
When ready to eat begin frying the Avocado rolls. They only need to be in fryer until outside is all golden this should only take a couple of minutes. It is important to do this right before eating so that the cheese is nice and warm when you eat it.
Remove and place on paper towels to drain excess oil off. Ready to enjoy!]]>
