Chicken Caesar Salad

Caesar Salad a salad that I love to eat but is not always a light option. This recipe is lightened up without comprising the great flavor. It has lots of chicken in it so it is very fulfilling as a light dinner. Do not be scared of the anchovies they add lots of flavor and are not fishy in the dressing I promise. If you like Caesar Salad I would highly recommend giving this recipe a try.

Ingredients:
1/3 cup light buttermilk
3 T. light mayonnaise
2 T. lemon juice
2 T. water
2 t. Dijon mustard
1 t. Worcestershire sauce
2 garlic cloves, minced
3 anchovy fillets, rinsed and patted dry
Salt and pepper
2 T. extra virgin olive oil
1 ounce Parmesan cheese, grated
1 large head Romain lettuce, torn into bite size pieces
18 ounces poached chicken breast
2 cups low fat croutons
Directions:

  1. Trim the chicken breast of any visible fat. Combine the chicken, 1 ½ cup water, 2 peeled and smashed garlic cloves, 2 bay leaves, and 2 t. low sodium soy sauce in a 12 inch skillet and bring to a simmer over medium low heat, 10-15 minutes. When the water is simmering, flip the chicken over, cover, and continue to cook until the chicken registers 160 degrees, about 10-15 minutes longer. Transfer to a carving board, let rest 5 minutes.
  2. While chicken rest process buttermilk, mayonnaise, lemon juice, water, mustard, Worcestershire, garlic, anchovies, ½ t. salt in blender until smooth, about 30 seconds. With blender running, add oil in steady stream. Transfer dressing to bowl and stir in all but 1 T. Parmesan.
  3. Gently toss lettuce with all but 2 T. of dressing and divide among four plates.
  4. Slice Chicken and toss with remaining 2 T. of dressing and arrange on top of salads. Garnish with croutons and remaining 1 T. Parmesan. Serve.
