Honey Almond Granola (My Absolute favorite Granola)

I love this granola recipe, it is really easy to just throw together and making it at home guarantees that you know exactly what ingredients are in it and that they are all high-quality ingredients. There are so many packages out there that can portray healthy on their labels with organic and natural, but then are full of sugar, and awful oils, such as palm, soy, canola, vegetable etc… This also taste so much better than any store-bought granola. I literally have to make this recipe on a weekly basis for my family and it takes less than 30 minutes to start to finish. I hope that your family enjoys this recipe as much as mine does.

We are all spring break🏖 right now at my house and we are using this time to catch up on much-neglected household to-do lists. Then we are putting together a list of some things they really want to do before the week is over, so they can do at least a couple of fun things after their hard work.😁 What do you do on your spring break? Are you a let’s get some spring cleaning done or do you always go on vacation or travel. Sometimes we do travel but more then not we are doing spring cleaning with a few fun activities and save are vacation traveling to the summer when it is hot🥵🌵 and miserable here. Now if I lived in a colder climate I may be more of a spring break traveler so that I could get out of the cold for a little while😉❄

Honey Almond Granola

Delicious honey flavor with roasted almonds and oats, so simple and good its the only granola you will ever want to make.

Ingredients
  

  • 6 cups gluten-free old fashioned oats
  • 1 tsp Himalayan salt
  • 1/2 cup coconut sugar
  • 1 cup almond meal
  • 1 cup unsalted almonds (raw or dry roasted)
  • 1/2 cup local honey
  • 6 tbsp coconut oil
  • 1/4 cup flaxseeds
  • 1/4 cup sprouted pumpkin seeds
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat the oven to 325 degrees. Line two large, rimmed baking sheets with parchment paper (this is optional, you can leave them unlined if you'd rather, just watch to make sure the granola doesn't stick while baking).
  • Add the oats, salt, coconut sugar, almond meal, flaxseeds, and pumpkin seeds to a large bowl. Coarsely chop the almonds and add them in the bowl. Toss until mixed evenly.
  • Combine the honey and coconut oil in a small saucepan and heat over medium-low just until the coconut oil is melted. Add the vanilla and whisk to combine.
  • Pour the honey mixture over the dry ingredients and toss until evenly mixed. Pour the granola evenly on two large, rimmed baking sheets and spread into an even layer.
  • Bake the granola for 15-25 minutes, tossing once or twice. Watch carefully so it doesn't burn. It should smell fragrant and be lightly golden. The exact baking time will depend on how crunchy you like your granola. I like mine a little more on the soft side so I usually bake for 20minutes.
  • Remove from the oven and let the granola cool on the baking sheets before breaking up into pieces and storing it in an airtight container. This is important if you like those bigger chunks in your granola. Enjoy!

Notes

Optional change add 1/2 cup unsweetened coconut and 1/2 tsp. coconut extract
