Hummus and Rice Fritters

Hope you all had a wonderful fun filled Halloween. I know we did. This was the first year that my kids just wanted to keep trick or treating all night (I was exhausted). We have more candy in our house now then I think we have all year long. So here is a recipe to hopefully balance out some of that sweet candy. 馃檪

These hummus fritters made for a quick healthy meal. I serve them with a salad on the side. My kids love to dip them in homemade ranch dressing when they eat them. I only add a little bit of red pepper so that they are kid friendly but if you like heat I would add additional red pepper.

Ingredients:
1 陆 cup precooked packaged brown rice
1 cup prepared roasted red pepper hummus
3 T. cake flour
1/8 t. ground red pepper
1 large egg white
Cooking spray
Directions:

  1. Place ingredients (except cooking spray) in a food processor; process until smooth. Heat a large nonstick skillet over medium heat. Spray with cooking spray. Add 录 cup batter mounds to pan, pressing each with the back of a spatula to flatten slightly.
  2. Cook 4 minutes on each side or until golden and thoroughly cooked. Remove from pan; keep warm. Repeat procedure with remaining batter.
  3. Sprinkle fritters with 录 t. salt and serve.
