Sugar Snap Peas with Bacon
It is interesting how so many people right now are trying to do the same thing (staying home, staying safe) but are have so many different experiences with it. I have had many people tell me that they don’t know what to do that they are so bored (and I think for those adults that may not have children home or they are all older this can definitely be the case) my experience however has been much of the opposite. With my three this experience has added a new role to my already many hats, as teacher. I am so thankful that both of my older children’s schools are doing lessons now so that has taken some of the pressure off of me (so thankful for teachers) but I am still trying to help to teach them understand and do a lot of their assignments. So this has defiantly made my life much busier.
I also have really bad anxiety when I am stuck at home. With every child I had I had postpartum depression and a big part of that was that I couldn’t leave the house. I really like to socialize and have to be planning my next event to look forward to or I find myself going down a dark wormhole. When I first heard that we were going to need to stay in our homes, that everything was getting canceled, and that we shouldn’t be in groups larger then 10 (but really only with who we are social distancing with) I had a panic attack, how was I going to manage this. Would I go into a dark depression, I could feel the walls closing in on me and I was scared! For my family and for myself.
To much of my surprise as I write this we are on day 26 of self quarantining ourselves. I have not found myself feeling confined I have had on an occasion some anxiety but never a full fledged anxiety attack. I have actually found myself really enjoying and savoring this time with my family. Don’t get me wrong I really do want things to get back to normal. I miss play dates, and family get togethers, but having this one on one time with my kids without the world distracting us, has been a special blessing in disguise. I have had the opportunity to spend more time with them on things that matter most. Like our religion and life lessons, that we were to busy for most of the time. I am so thankful for this new realization.
I know that things will get better and that we will get through this and life will go back to normal, but for me I hope it doesn’t go back to exactly how it was, I hope that as a family we have learned the importance of slowing down, spending quality time together, appreciating the many simple blessings that we have every day, and REMEMBERING what is truly important in life! I think we all needed this a little in one way or another. I think this was a wake up call to all of us that we need to slow down, take care of and appreciate the people in our lives and the things we are blessed with. I hope that when this is all over we are a more united community and world. It has been amazing to me to see our community come together even though we are apart. I also just want to give a big shot out to our many brave and selfless healthcare workers that put their own lives and families and risk helping others everyday!
Okay now that I got that spill out lets talk food, seriously though this recipe is one of the best sides I have had, and it is super easy. I love to make this when my main dish may be more time consuming or complicated, or for holidays meals such as Easter (coming up people) get your grocery pick up list in.
Sugar Snap Peas with Bacon
Ingredients
- 4 slices sugar free bacon, chopped
- 4 shallots, sliced thin
- 1 1/2 pounds sugar snap peas, strings removed
- 1/4 cup water
- 1/2 cup fresh mint, torn
- 1 tsp grated lemon zest
- 2 tsp lemon juice
- salt and pepper
Instructions
- Cook bacon bits in 12" skillet over medium heat until crispy, about 7 minutes. transfer to paper towel-lined plate.
- Pour off all but 1 tbsp of bacon fat from skillet and heat over medium-high heat until shimmering. Add shallots and cook until well browned, about 3 minutes. Add snap peas, water, and 1 1/4 tsp salt and cook , covered until snap peas are crisp-tender, about 3 minutes.
- Uncover and continue to cook, stirring often, until liquid has evaporated and snap peas are tender, about 2 minutes. Remove from heat and stir in mint, lemon zest and juice, and reserved bacon. Season with salt and pepper to taste. Serve
