Chewy Peanut Butter Cookies
These peanut butter cookies are a perfect combination of chewy and crunchy. If you are peanut butter fan you have to give this a try. My love peanut butter cookies but my family would rather have chocolate chip or snickerdoodles if given the choice. Even with not really liking peanut butter cookies they gobbled these up in just a few hours. I am thinking about adding mini chocolate chips the next time I make them as well, but if anyone tries that before I do please comment and let me know how they turned out. Hope you enjoy!

  1. Combine flour, baking soda, and salt in medium bowl, Whisk peanut butter, brown sugar, butter, brown sugar, butter, corn syrup, granulated sugar, egg, yolk, and vanilla until combined. Stir in flour mixture until combined. Cover bowl and put in fridge until firm (appx 1 hour).
  2. Preheat oven to 350 degrees. Line cookie sheet with parchment paper or silicone mat. Scoop 2 tablespoon of dough on cookie sheets about 2 inches apart. Using a greased measuring cup flatten each ball to 3/4 inch thickness and top with chopped peanuts.
  3. Bake cookies until puffed and edges are lightly browned, 12-14 minutes switching and rotating sheets halfway through baking. Cool 5 minutes on sheets then transfer to cooling rack. Enjoy! Recipe source Cooks Country 2010
