Chicken Cordon Bleu Chicken Nuggets
This chicken nugget recipe is a great kid and adult pleaser. The kids get the chicken nuggets they always ask for with a little upgrade of cheese and ham. We also add some flax seed to increase the nutrition but they don’t ever need to know that. My kids never even seem to notice.
You can easily leave out the flax seed if you don’t have it but it does add some fiber to the chicken nuggets. It also has omega 3 and lignans, which have antioxidants that help prevent cancer. They also lower blood pressure, and decrease cholesterol. To add just one more they have also been shown to help control blood sugar. So I buy a big bag from Costco to keep on hand and add to most of my breads as well as smoothies and any other recipes that I can. The picture also includes a great salad that I will share soon as well.
Chicken Cordon Bleu Bites
Ingredients
- 5 boneless skinless chicken breast
- 8 ounces Swiss cheese, sliced
- 8 ounces sliced honey ham
- 3 eggs
- 1 tsp water
- 1/2 cup all purpose flour
- 6 ounces panko bread crumbs
- 1 tsp Italian seasoning
- 1 tbsp ground flaxseed
Instructions
- Preheat oven to 350 degrees. Cut chicken breasts into about 1 inch squares. Cut cheese and ham slices slightly smaller then the chicken. Slightly wrap chicken piece around ham and cheese and poke toothpick through to hold. Beat eggs with 1 teaspoon of water in a shallow bowl. Place four in a separate bowl, and panko/flaxseed mixture in seperate bowl. Dip chicken pieces in flour, next egg, and then roll in panko mixtureto bread them. Set them on a cookie sheet that is lined with aluminum foil and greased. When all of them are breaded and on cookie sheet spray additional cooking spray on top. Bake, uncovered, 20 minutes. Serve with honey mustard or favorite dipping sauce. Makes about 24 bites
