Gluten-free Banana Bread Oat Cake
These bars are one of my go to snacks for my kids, (also are great for breakfast) when I have bananas that are past eating plain (anyone else family not touch a banana that has started to get brown spots) My family will not touch a banana when it has started to spot, so I have a few banana recipes that we love, or I will peel them slice them and put them in the freezer to add to smoothies, or make banana ice cream.
This recipe takes very little time, and if you don’t have almond flour it turns out great using all oats. If you like nuts they are a great addition, and the chocolate chips are of course optional but my family loves the banana and chocolate combination.
This recipe is gluten free, low in sugar and free from processed sugars (depending on chocolate chips you use).
Banana Bread Oat Cake
Ingredients
- 2 1/4 cup rolled oats finely ground in a blender to a flour
- 2 1/4 cup almond flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp Himalayan salt
- 1 tsp cinnamon
- 5 bananas mashed
- 2 tsp vanilla extract
- 1/4 cup maple syrup
- 2/3 cup chocolate chips
- 1 tbsp chia seeds
- 2 tbsp ground flaxseeds
- 1/4 cup yogurt
- 1/2 cup unsweetened applesauce
Instructions
- Preheat the oven to 350 degrees. Lightly coat a 9x13 pan with cooking spray.
- In a medium bowl, whisk together the ground oats, baking powder, baking soda, salt, chia seeds, flaxseeds, and cinnamon
- In another bowl, add bananas, vanilla, applesauce, maple syrup, and yogurt.
- Pour wet ingredients in to bowl of dry ingredients and mix just until combined
- Spread the batter evenly in the prepared pan. Sprinkle with chocolate chips. Bake for 25 minutes or until a toothpick comes out clean. Let cool and then enjoy.
