Dang good Mexican Street Corn on the Cob

Sweet Corn or how I love sweet corn. Sweet corn is fresh for the picking right now, and I wanted to share one of my families favorite way to eat it!

Memory Lane

I have lots of really great memories of this time of year and picking sweet corn. The town where my mom grew up Snowflake/Taylor Arizona always has a sweet corn festival the first weekend in September. It is technically Taylor Sweet Corn festival but corn is grown in Snowflake and Taylor and I will clarify so that I don’t get any Snowflake or Taylor residents jumping on here to correct me.  Though you will get the Snowflake residents saying they are the best and the Taylor residents say theirs is but I will confirm as an unbiased taster that they are both equally good. They seriously have the best sweet corn I have ever had (the store corn doesn’t even compare). My grandpa use to grow fields of it and around this time we would all get together and pick it, boil it, and cut it off the cob to freeze so we could enjoy it all year round. We would spend hours picking and then sitting on my grandpas truck bed husking all the corn, while my grandpa would inspect them all “that right there is a good piece of corn, or that one was picked to early.” Oh how you were never hear the end of it if you picked one to early! I love that my son still when we get corn always says “When we would pick corn with grandpa we would always eat a few raw in the field (just to make sure they were good) and he would always say don’t tell grandma.”

My grandpa died a few years ago so these memories are even more precious and special to us. Now we don’t have our own fields but we still go for the festival and buy as much corn as we can get our hands on, they sell out fast! We didn’t make it this year because of COVID and it was really missed!

Do you have food in your life that is so cemented in stone with memories that they all just come flooding back like yesterday every time you eat it? I have a lot of really good ones and some not so good ones (morning sickness can just ruin some food for life). I think that is one of the reasons why I love food and cooking. It makes memories that last a lifetime. If you are ever in Arizona the beginning of September I would highly recommend getting some corn and then making this recipe!

Dang good Mexican Street Corn on the Cob

Perfectly grilled Corn on the cob with creamy herb dressing and cheese. Not your authentic Mexican corn recipe, but it will not disappoint. Perfect side dish when you are grilling especially now while corn is in season.

Ingredients
  

  • 5 fresh sweet corn cobs
  • 1/4 cup mayonnaise
  • 2 tbsp sour cream
  • 1/4 tsp garlic powder
  • 1 lime juiced and zested
  • 1/4 cup Parmesan cheese
  • 1 tsp smoked paprika or Trader joes chili lime seasoning
  • 1/2 cup cilantro chopped

Instructions
 

Grilling Corn

  • Heat grill to medium
  • Pull the outer husks down but do not remove off. You just want to be able to remove all the silk from the corn and then fold the husks back up over the kernals.
  • After they are all clean place ears of corn in a large pot filled with cold water and 1 Tablespoon of salt. Soak corn for 10 minutes.
  • Remove corn and dry off excess water. Place on grill and cover for 20 minutes. Rotating corn about every 5 minutes.

Spread

  • While corn is grilling combine mayo, sour cream, garlic, and lime juice and zest in small bowl. Set aside

Topping

  • Combine cheese, paprika and cilantro, set aside
  • Pull corn off of grill and slather with spread until covered and then add topping. Enjoy!!

Notes

*Notes To make it more authentic you can use cotija cheese instead of Parmesan
