Amazing Spinach Rice

This is one of my favorite rice recipes that I make, it is full of flavor. Those of you who have followed me along with my recipes know that I love to get greens to my kids whenever I can, and this recipe checks that box without having complaints from my kids, they devoured every bitešŸ˜ If you like rice but are tired of the same old way that you always eat it you have to try this recipe, I’m telling you that it is super easy but so good, it will only take a few minutes longer then your regular rice recipe I promisešŸ˜‰

The best Spinach Rice Recipe

This recipe will turn your regular rice into extravagant with only a few extra ingredients and time. Full of tons of flavor and packed full of nutrients this recipe is a winner that you will love making for your family

Ingredients
  

  • 3 Tbsp avocado oil
  • 1 onion, chopped fine
  • 1 1/2 cups long-grain white/brown rice
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 2 1/2 cups low sodium chicken broth
  • 1 1/2 cups fresh baby spinach, chopped (20oz) see note
  • 2 scallions, sliced thin
  • 2 Tbsp fresh mint, chopped
  • 1 Tbsp lemon juice
  • 2 oz feta cheese, crumbled (1/2 cup)

Instructions
 

  • In a pressure cooker or rice cooker, turn on saute option and let it start to warm up while you gather your ingredients. Add oil and heat until shimmering.
  • Add onion, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until softened, 3-5 minutes. add rice and cook, stirring frequently, until edges begin to turn translucent, about 2 minutes. Add garlic and oregano and cook until fragrant, about 30 seconds
  • Stir in broth and close lid and cook on rice setting with a rice cooker, or if using instapot, cook for 12 minutes on low pressure for white rice and 22 minutes on low pressure for brown rice. *see note
  • When done, and steam has released if using instapot, open lid and add chopped spinach, (see note) shut lid and let sit 5 minutes, uncover and fluff with a fork.
  • Stir in scallions, mint, and lemon juice, tossing until any clumps of spinach are broken up and thoroughly mixed into the rice. Season with salt and pepper to taste.
  • Transfer to a platter and sprinkle with feta cheese. Serve

Notes
If you don't want to use fresh spinach you can also use 10 oz frozen spinach drained
If you don't have an instapot or rice cooker you can make this on the stovetop in a sauce pan, after pouring in broth bring to a boil on medium high heat, then cover and reduce heat to low, and cook until liquid is absorbed about 20 minutes for white rice, 45 minutes for brown rice. Continue with recipe as written
My rice cooker does not give times it only gives a brown and white rice button so when using it I just hit the button for the rice I am cooking.
If you don't have the saute feature on your rice cooker/instant pot just saute in another pan on stovetop and then add to cooker.Ā

I have the 6qt Instant Pot duo, if you use Alexa this 6qt does seem awesome, but if you have a large family I would get the 8qt Instant Pot
