Sugar Snap Peas with Bacon

Quick and easy side dish of sweet sugar snap peas with savory bacon, that is a perfect compliment to a meal

Ingredients
  

  • 4 slices sugar free bacon, chopped
  • 4 shallots, sliced thin
  • 1 1/2 pounds sugar snap peas, strings removed
  • 1/4 cup water
  • 1/2 cup fresh mint, torn
  • 1 tsp grated lemon zest
  • 2 tsp lemon juice
  • salt and pepper

Instructions
 

  • Cook bacon bits in 12" skillet over medium heat until crispy, about 7 minutes. transfer to paper towel-lined plate.
  • Pour off all but 1 tbsp of bacon fat from skillet and heat over medium-high heat until shimmering. Add shallots and cook until well browned, about 3 minutes. Add snap peas, water, and 1 1/4 tsp salt and cook , covered until snap peas are crisp-tender, about 3 minutes.
  • Uncover and continue to cook, stirring often, until liquid has evaporated and snap peas are tender, about 2 minutes. Remove from heat and stir in mint, lemon zest and juice, and reserved bacon. Season with salt and pepper to taste. Serve

12 inch skillet
If you don't have shallots you can replace it with a red onion
