Berry Lime Fluff Pie
This is a spin off of a key lime pie with fresh berries on top. So easy no cook dessert for summer.
- 1 graham cracker pie crust homemade or store bought
- 1 pkg (8oz) cream cheese softened
- 1/2 cup whole milk ricotta cheese
- 3/4 cup powdered sugar**
- 1/2 tsp vanilla extract
- 1 lime zested
- 1/2 cup heavy whipping cream
- 1 1/2 cup fresh strawberries washed and quartered
- 3/4 cup fresh blueberries washed
- 1 tbsp raspberry jam optional
In a large bowl or mixer, beat cream cheese, ricotta, sugar, vanilla and lime zest until smooth. About a few minutes. Transfer to another bowl and set aside
In mixer beat heavy cream until stiff peaks form; fold into cream cheese mixture.
Spread into pie crust, refrigerate, covered, at least 4 hours.
Just before serving, toss berries and jam together (if using) and spread over top of pie. If desired you could also serve with additional whipped cream on top.
